Winter Immunity Chicken Soup

The perfect recipe to fight off those winter colds and flus.

Ingredients

  • 8 chicken Legs
  • 1 onion, diced
  • 3 garlic cloves, finely diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 3 celery sticks, diced
  • Handful of mushrooms, chopped
  • Chicken stock or broth
  • Rice noodles or sweet potato noodles

Method

  1. Fry chicken legs in a little ghee. Take out and set aside.
  2. Dice onion and mince garlic and fry in a little ghee.
  3. Add diced carrot, zucchini, celery and chopped mushrooms and fry up.
  4. Add chicken legs back to the pan and cover with broth or stock. Simmer for 3 hours.
  5. Take chicken legs out and pull meat off the legs.
  6. Add noodles here at this point to cook while pulling the meat off the bones.
  7. Add chicken back into the soup.
