Peanut & Banana Oat Muffins

You can’t go past these when it comes to breakfast on-the-go or a quick snack…

Ingredients

  • 2 bananas
  • 2 tbs of peanut butter
  • 2 cups oats
  • 1/2 - 3/4 cup of LSA
  • 30g vanilla protein powder (optional)
  • 2 tsps baking powder
  • 1/4 cup maple syrup
  • 1 cup milk
  • 1 tbs chia seeds
  • 1 egg
  • 100g butter, chopped

Method

  1. Heat oven to 175C.
  2. Mash bananas and mix in peanut butter to a make a paste.
  3. Add oats, LSA, protein powder, chia seeds and baking powder.
  4. Mix milk, maple syrup and egg in a separate jar and add to banana mixture.
  5. Add chopped up butter into mixture.
  6. Bake in a muffin pan for 20 mins.
  7. Serve warm with yoghurt, coconut yoghurt or cream and berries, if desired.
