Tropical Oat Balls

These tropical oat balls are sure to be a hit and the perfect nutrient dense snack for the school lunchbox.

Ingredients

  • 1 cup rolled oats
  • ¼ cup linseed (flaxseeds)
  • ¾ cup sunflower seeds
  • 225g tinned pineapple pieces
  • 1 medium pear chopped
  • ¾ cup desiccated coconut
  • 2 tsp vanilla essence
  • ¾ cup desiccated coconut (for rolling)

Method

  1. Process all ingredients, except the extra coconut, in a food processor until well combined.
  2. Using damp hands, shape heaped tablespoons of mixture into bite-sized balls.
  3. Roll balls in extra coconut.
  4. Place on a baking-paper-lined tray, cover and refrigerate for 2 hours or until firm.
  5. Transfer to an airtight container.
