Leftover Christmas Ham Fettuccine Carbonara

A perfect dinner recipe to use up all that leftover Christmas ham - or an instant crowdpleaser any time of the year.

Ingredients

  • 1 tbs olive oil
  • 2 garlic cloves, crushed
  • 200g sliced ham
  • 2 egg yolks
  • 3/4 cup cream or Greek yogurt
  • 1 cup Parmesan cheese, grated
  • Handful of spinach
  • Handful of peas
  • Salt and pepper
  • 1/4 cup parsley, chopped
  • 1 packet of fettuccine pasta

Method

  1. Cook pasta. Heat oil in fry pan and cook garlic and ham until ham is crisp.
  2. Whisk egg yolks, cream and Parmesan in a jug. Season with salt and pepper.
  3. Add egg mixture and ham mixture to the pasta. Toss gently then add spinach and peas.
  4. Serve topped with Parmesan and parsley.
