Classic Anzac Biscuits (or Slice)

The perfect recipe to get the kids in the kitchen.

Ingredients

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup wholemeal flour
  • 1/2 cup mixed seeds
  • 1/2 cup coconut sugar
  • 1/4 cup honey or pure maple syrup
  • 1/2 cup coconut oil (or unsalted butter if preferred)
  • 1 tsp baking soda
  • 2 tbsp boiling water
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat your oven to 160°C and line two trays with baking paper. Alternatively, you can bake as a slice or bake in a muffin tray.
  2. In a bowl, combine the oats, coconut, seed mix, flour and sugar.
  3. Stir these dry ingredients until they are well mixed.
  4. In a saucepan over low heat, gently melt the coconut oil and honey/maple syrup together until they become a smooth liquid. Do not let it boil.
  5. Dissolve the baking soda in the boiling water and then add it to the melted oil and syrup mixture. This will foam up - it's part of the magic that gives the biscuits their unique texture.
  6. Pour the wet mixture into the dry ingredients and stir until everything is well combined.
  7. The mixture should stick together but not be too wet. If it's too dry, add a tiny bit more boiling water.
  8. Roll tablespoons of the mixture into balls and place them on the prepared baking trays, flattening them slightly with the back of a fork. Alternatively, press into a baking tray or into a muffin tin.
  9. Bake for 12 - 15 minutes or until golden brown. They will still be soft but will harden upon cooling.
  10. Allow the biscuits to cool on the trays for about 5 minutes before transferring them to a wire rack to cool completely.
