Banana Cake

A delicious wholefoods banana cake using real ingredients. Make with or without the icing for a yummy afternoon tea treat or for a sweet snack for the school lunchbox.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup Medjool dates, pitted and chopped
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp baking soda
  • 1 1/2 cups whole meal spelt flour
  • Pinch of salt

Method

  1. Preheat your oven to 180°C. Grease a cake pan or muffin tins, or line with baking paper.
  2. Combine the mashed bananas, chopped dates, melted coconut oil and eggs. Mix well until all ingredients are well combined.
  3. Add in the vanilla extract, cinnamon, nutmeg and ground ginger. Mix until everything is well combined.
  4. In a separate bowl, whisk together the baking soda, whole wheat flour, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into your prepared cake pan and smooth out the top with a spatula.
  7. Bake for 30-35 minutes or until a toothpick inserted into the middle of the cake comes out clean.
  8. Remove from the oven and let cool completely before icing.

Cream Cheese Icing (optional)
 
Ingredients:

  • 225g cream cheese, softened  or 115g of cream cheese and ½ cup of Greek yoghurt
  • 1/4  cup honey
  • 1  tsp vanilla extract

Method:

  1. In a mixing bowl, beat the  softened cream cheese until it's smooth.
  2. Add the honey and vanilla  extract and beat until well combined.
  3. Spread over your cake or cupcakes and enjoy!
