Almond & Goji Berry Slice

A beautiful and delicious slice for the whole family.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup of puffed quinoa (optional)
  • 1/4 cup cocoa powder
  • 1/2 cup coconut oil, melted
  • 1/2 cup dates
  • 1/2 cup honey or maple syrup
  • 4 tbs collagen
  • 1/2 cup sunflower seeds
  • 1/2cup pumpkin seeds
  • 2 tbs chia seeds
  • 1 tsp vanilla extract
  • Pinch of salt

Topping ingredients:

  • 1/2 cup mixed nuts (such as almonds, walnuts, and pecans), roughly chopped
  • 1/2 cup mixed berries (such as goji berries, freeze dried berries or fresh berries
  • Optional for topping: sea salt, nut butter swirled on top, or berry slices

Method

  1. In a food processor, blend the black beans until smooth.
  2. Add in the cocoa powder, melted coconut oil, honey or maple syrup, vanilla extract and salt.
  3. Process until the mixture is smooth and well-combined.
  4. Adjust the sweetness if necessary.
  5. Add the puffed quinoa and stir in.
  6. Pour the mixture into a lined 20cm square baking dish.
  7. Smooth the top with a spatula and sprinkle the berries and nuts on top.
  8. If desired, add a sprinkle of sea salt.
  9. Freeze the mixture for at least 2 hours, or until it's solid enough to cut into bars.
